I recently thought back to a friend of mine who cooks steaks at a chain steakhouse (Hoss’s in Greensburg, PA). He taught me how to determine Rare, Medium Rare, Medium, etc. by using my hand and I just recently thought about how valuable this method is. If you’ve ever eaten at a Hoss’s, you know that they train their cooks well before they cook steaks. I’ve used this method since then and that was 15 years ago. Practice this when you cook your steaks and you will get the hang of it. This method is very useful when cooking bison since time seems to pass very quickly when cooking bison steaks. Chef Jason Hill teaches it well.
